Random Recipes

RED VELVET CUPCAKES

I made these for Olivia's birthday party - and they were a hit.

You gotta try them. They are so delicious and so easy to make.

Here's what you'll need:

1 pkg. red velvet cake mix
1 pkg. instant chocolate pudding
1 8 oz. cream cheese, softened
1/2 cup butter, softened
4 cups powdered sugar (i know - so healthy and good)
1 cup thawed cool whip
1 square baker's white chocolate, shaved into curls

Here's how to make them:

Prepare cake batter and bake as directed on package for 24 cupcakes, blending dry pudding mix into batter before spooning into prepared muffin cups. Cool completely.

After they are cool, beat cream cheese and butter in large bowl with mixer until well blended. Gradually beat in sugar. (I did a cup at a time). Whisk in cool whip. Spoon 1 1/2 cups of this mixture into a small ziplock bag and seal it. Duh. Cut a very small corner off the bottom of the bag. Insert tip of bag into top of each cupcake to pipe about 1 Tbsp. into center of cupcake.

Frost cupcakes with remaining frosting. Top with chocolate curls. Keep refrigerated.

Pig out.

Here's some pics. To get the hole in the cupcake, I used the end of a wooden spoon. Worked dandy!
