Love - Joy - Peace

I didn't think I'd have time to post much in the next week or so, for some reason???? :)

So I just wanted to send out wishes to everyone for a very Merry, Christ-filled Christmas.

I heard a devotional read a few weeks ago. It was by Max Lucado (love him). It was about Jesus birth and life, and how he was just like us. Human. Sinful. He got sick, he had bad dreams, he drank, ate, struggled, sang, etc. This just struck a chord with me. He was normal, just like us. I think sometimes we forget that. And even more importantly, He didn't have to come to earth. He didn't have to die on the cross. He didn't have to save us from our sins. But He did.

What love is this?

Unconditional, devoted, all-consuming love.

Can you fathom that love? I get tears in my eyes just thinking about it.

My prayer for you this Christmas season is that you know God's LOVE.

That you experience God's JOY.

That you feel God's PEACE.

This my friends, is what CHRISTmas is all about.

Random Recipes

Hot Crab Dip
1/2 C. Milk
1/3 C. Salsa
3 8oz. pkgs. cream cheese
2 pkgs. crabmeat, flaked
1/2 C. chopped onion
Assorted Crackers
Combine milk and salsa and put in crockpot. Stir in cream cheese, crab and onion. Cover and cook on low for 3-4 hours, stirring occasionally. Serve with crackers.
This is so good. I just use the imitation crab - you can put however much you want in it.

Fudgy Oatmeal Bars

2 C. brown sugar
1 C. soft butter
2 eggs
1 tsp. vanilla
2 1/2 C. Flour
1 tsp. soda
1/2 tsp. salt
3 C. quick oats
1 12oz. milk chocolate chips
2 T. butter
1 can sweetened condensed milk
1 tsp. vanilla
1/2 tsp. salt

Mix the first 8 ingredients and put 3/4 of the dough in a greased 15x10 jellyroll pan. Melt chocolate chips and butter in microwave i n medium bowl. Then add condensed milk, vanilla and salt. Mix well and pour over oatmeal mixture. Put the rest of the oatmeal mixture on by teaspoonfuls. Bake at 350* for 20 minutes.

(If you want a little thicker bar, you can use an 11x14 pan like I did in the picture :) This is a recipe from my Mom. She would always make them for us when we were young. DELISH!!

Brownie Delight

1 pkg. brownie mix (for 9x13)
1 8oz. pkg. and 1 3 oz. pkg cream cheese (softened)
2 C. Powdered Sugar
2 C. cold Milk
2 8 oz. whipped topping
1 3.9 oz pkg. instant chocolate pudding
Crushed Heath bars
Prepare and bake brownies according to package in a greased 9x13. Cool completely. In a mixing bowl, beat cream cheese and sugar for 2 minutes. Fold in 1 8 oz. whipped topping and spread over brownies. In another bowl, combine milk and pudding mix and beat until smooth. Refrigerate for 5 minutes then spread over cream cheese layer. Spread with remaining whipped topping and sprinkle with crushed Heath bars. Refrigerate until serving.

Oh baby, is this good.

Random Recipes

Cream Cheese Pumpkin Loaf
1 C. Canned Pumpkin
1 C. plus 2 Tbsp. sugar, divided
1/2 C. Packed Brown Sugar
4 egg whites, divided
1/2 C. Milk
1/4 C. Oil
2 C. Flour
2 1/2 tsp. Baking Powder
2 tsp. Pumpkin Pie Spice
1/4 tsp. Salt
1 8 oz. pkg. Cream Cheese
Heat oven to 350*. Mix pumpkin, 1 cup sugar, brown sugar, 3 egg whites, milk and oil in a large bowl. Add flour, baking powder, spice and salt; stir just until moistened. In another bowl, beat cream cheese, remaining sugar and remaining egg white with whisk until well blended.
Spoon half of pumpkin mixture into greased 9x5 loaf pan; cover with cream cheese mixture, and remaining pumpkin mixture.
Bake 1 hour, or until toothpick comes out clean. Loosen bread from sides of pan; cool in pan approx. 10 minutes. Remove bread from pan to wire rack, cool completely. This bread is very moist and delicious. Enjoy!

Random Recipes

Here's a fabulous salad recipe I love to use around the holidays.

It's so pretty and festive.

Cranberry Romaine Salad

1 Head Romaine Lettuce, chopped

1 1/2 C. Chopped Pecans

2 C. Dried Cranberries

1 1/2 C. Feta Cheese

-Toss in large bowl-

Poppyseed Dressing

3/4 C. Vegetable Oil

1/2 C. Sugar

1/3 C. White Vinegar

1 T. Poppyseeds

Shake together in seal tight container, and serve with salad.

Psalm 40:5 - "Many, O Lord my God, are the wonders you have done. The things you planned for us no one can recount to you; were I to speak and tell of them, they would be too many to declare."

Do we have a lot to be thankful for, or what? Seems like I'm always grumbling about something. It's always easier to complain or see the negative, than the positive.

I love Thanksgiving. It's my favorite time of year. Helps me refocus and get back to what's important in life.

When you feel like complaining, or grumbling - try to remember how many blessings God has given you, and how fortunate you really are. I always say that to my kids when they see something they want, and I tell them no - or when they won't eat their supper. The whining and negativity start and I say - "Look how many things you have at home to play with (that never get played with), and look at all the blessings we have. They are many kids who are starving to death, and/or have never even had a toy, ever."

All I know is, I'm truly thankful, and I try very hard not to take what I have for granted. There is always someone worse off.

Here's some things off the top of my head today that I give thanks for:

-My God
-His Son
-His Sacrifice
-My home
-My 3 healthy children
-My husband and our marriage
-Parents who are always there
-My twin sister
-My 2 brothers and their wives (I couldn't ask for better sil's :)
-My grandparents
-An abundance of food
-Friends - lots of great friends
-My church familiy
-My Pastor
-Games like Hungry Hippo, and Memory that I love to play with my kids
-Rainbows and all of nature's beauty
-Dish soap
-A kitchen table
-My bed
-My washing machine and dryer (I'm not thankful for laundry though)
-Snow plows
-Lawn tractors
-Family get-togethers
-Phone books
-A smile on someone's face
-Laughter from my children
-Tears of joy
-Girls Nights
-New babies
-Hugs & kisses
-A sweet card from a dear friend
-Past relationships
-New relationships
-That verse I posted at the top
-Sweet eternity w/ my Lord

Now, some of these you might say, huh?? But seriously, think about it. Aren't you thankful for a toilet? Or phone books? They sure come in handy sometimes, don't they??

Life has been throwing us a curveball lately. But the night I stood out on my deck and took these, the air was crisp, it smelled of Fall, and a flock of geese were flying over in their V-shaped pattern honking to eachother. A peace came over me.
God's here.
He's taking care of me.
He who can paint skies as beautiful as this, knows who I am and what I need.
Such sweet, sweet comfort that is.

Random Recipes

So I decided I'm going to do something different with my blog.

One of my most favorite things to do is find and share easy recipes. As a part-time employee, and full-time Mom, we all know life is crazy hectic at times, and the last thing we have time for is being in the kitchen. I have lots of favorites that are just, well, favorites! But I'm always looking for new ones as well. I am all about easy, quick recipes...but they should be tasty. And something my family will most likely enjoy :)

Sooooo, I'm gonna start sharing some of my favorite recipes on my blog. Along with a picture of it, if I remember to take one before we devour it. I love sharing my easy recipes and hopefully it will make your life a little easier too :) I'll call it Random Recipes - because with my life, you never know what kind of recipe it's gonna be, or when I'll post one! :)

Now, please keep in mind that I am definitely no Paula Deen. But I do love to cook and bake, and one of my most favorite things to do is EAT! So I hope you will enjoy, and be able to use some of these recipes!

Earthquake Cake
2/3 c. coconut
2/3 c. chopped pecans
2/3 c. chocolate chips
1 8oz. pkg. cream cheese
1 18oz. pkg. German Chocolate cake mix
1 stick butter
2 c. powdered sugar

Follow directions carefully. For full effect, sprinkle coconut, pecans and chocolate chips on bottom of greased 9x13 pan. Follow directions on back of box, mix cake mix and pour over first layer in pan. Melt cream cheese and butter. Add powdered sugar, mix well and pour on top, spreading to make a little thicker on edges. (Note: It will be a little tough to spread, so when pouring over, make sure you cover cake mix so you don't have to spread as much.) Bake at 350 for 40-50 minutes or until done in middle. Enjoy!!!

I'm gonna go eat a piece right now.

Inconvenient Gratitude

I read something this morning that really hit home.

Every day I go to a web-site called (in) Courage, and read their daily post. (in) Courage was started by a group of women who "felt called to be real, authentic, brave women for the Kingdom and wanted to connect with other women who did as well."

Each day one of them write a post, and I have never not read one that I couldn't relate to or take something away from. But today's especially.....wow.

Hit me right between the eyes. Way too real for me right now.

Cameron: "But, um, (stutter, stammer)....my tummy is tired but my eyes are not."

For us moms that work, daycare is vital. Not just a place for our kids to go, but a place that we feel safe and comfortable with. A place where our kids have fun, get played with and learn, and feel safe and loved.

In September our family had to find new daycare after going to the same place for over 6 years. That was quite a change in routine. It was sudden and unexpected, and kind of like mourning a death in a way. Suddenly, we had no place for our kids to go. It was a very unsettling feeling. We immediately gave it to the Lord. And, like always, He answered in a huge way.

The area where we live has a huge need for daycare. There are several families that were and are in need of one. We were very limited as to where to send our kids, but God opened a door for us. My boys are now going to a wonderful lady who has been doing daycare in her home for over 6 years. She is amazing to me. Of course I think anyone who does daycare in their home is amazing. I, myself, could never do it. It takes a special person, for sure.

But my oh my, our Miss Amanda is a true God-send. We LOVE her. She is caring, loving, genuine, honest (which I think is a must with a daycare provider), and so patient. The boys are loving it there. After the first week that Emmitt went, she gave me two pages of pictures she had taken of him. I mean - what? Seriously?? That is just awesome! I love to see what my boys have been up to during their day.

She is definitely an answer to prayer. We were only without daycare for about 3 weeks, when God brought us to Amanda. We are so thankful. So very thankful.

But please, will you pray with me for my sister, and many of my friends. They just got word yesterday, that the local christian daycare where they all send their kids, is closing down. How awful. I know how they feel....like, "What am I gonna do now?" But like He did for us, God has a plan for them as well. He just has to make it clear yet :)

But these mama's, these special friends of mine, sure need comfort right now, and peace that it'll all work out. Our kids are our most treasured blessings. We as Moms need to know they are safe and loved while we are away from them. Pray that these families will find a place like this. Thank you!

Gone Fishin

Eric & I took the kids fishing Labor Day on Dyers Lake. It's just a tiny lake about 3 miles from our home. Perfect kid fishing lake.

I actually took some fish off the hook! Yay for me. But most of my time was spent making sure Emmitt didn't go overboard.

The simple things....but not really....

We think of the butterfly sometimes as a simple thing in life. But actually, if you really think about it, it's simply a miracle.

Another miracle our Lord has created for us to enjoy.

Every summer, one of our favorite things to do is find monarch butterfly caterpillars on those cool looking milk-weed plants. We bring them home, put them in a jar w/ some leaves, and wait for it to cocoon. It usually happens over night, or when we're not watching. But when it hatches, it's just so amazing. The kids love this, and I love that I can share this with them.

I love to teach them and show them about all the wonderful things our Lord has created for us here on this earth of His. I'm thankful for these simple yet complex things He lets us experience. What an awesome creator we serve.

The smell of Fall is in the air!

Well, in about an hour or so, we will be off to another one of Olivia's soccer games. They have played 6 so far, and are undefeated. Eric is enjoying coaching her team again this year. They are playing so well, and are learning what teamwork is all about.

Fall not only brings soccer, but lots of other fun activities - like our school's annual auction, fun booster club activities and fund-raisers, our anniversary!! (12 years this year!), pumpkins/halloween, making apple pies w/ my mom, grandma and sisters, etc.....the list could go on. Needless to say, it's my most favorite time of year!!! I love the crisp fall air, the cooler weather, the gorgeous leaves changing colors, and all the fun activities! It's a busy, hustle/bustle time of year, but still my favorite. I only wish summer came after it, and not our cold Michigan winters!!! Brrrrrrr :( But let's not think about that yet :)

This past month a lot has happened to our family. The major change was a switch in our daycare. For 6 years my kids have been going to the same daycare, and they won't be going anymore due to some changes in that family's lives. It's sad, it's kind of like mourning a death in a way....we have to say goodbye to something that's been routine for years, and that's hard. But life is full of changes, and GOD brings those changes for a reason. Throughout all of this, I went to my Lord in fervent prayer for a door to open for a new daycare, and last week He answered our prayers in a big - no, HUGE way. He is so amazing, why do I ever doubt? So tomorrow Emmitt will start going to Amanda's house 3 days and week. We went and visited her last week, and my motherly instinct just told me, YES, this is it! Praise God.

This same God who brings on the changing of the seasons, and does things so vast we can hardly comprehend them, listened to me and my prayers last month, and cares for me so very much that He answered them ten-fold! I thank Him and Praise Him for being so awesome!!
